Hi Aaron,
Yes, it you should be able to add/edit the field specific help in the DB config. Under Manage - Table/Columns - and then right click "Edit" on the field you want to edit the Help text for. The trick is to pull up the text with the magnifying glass and then be certain to "Save". See attached screen shots for a better depiction.
